🛒Ingredients

  • 1 cup Coarse Gram Flour (Besan)
  • 1 tbsp Coarse Semolina (Sooji)
  • 0.75 cup Pure Desi Ghee
  • 0.75 cup Sugar
  • 2 cups Warm Milk (or water)
  • 0.5 tsp Cardamom Powder
  • 8-10 Saffron strands (Kesar)
  • 2 tbsp Chopped Almonds & Pistachios

👨‍🍳Step-by-Step Instructions

1Prep Saffron Milk

Steep saffron strands in 2 cups of warm milk. Keep warm.

2Slow Roast Besan & Sooji

Melt ghee in a heavy pan. Add besan and semolina. Roast on low flame stirring constantly for 12-15 mins until golden brown and releasing a rich nutty aroma.

3Pour Saffron Milk Slowly

Lower heat completely. Gradually pour hot saffron milk into roasted besan while whisking vigorously to avoid lump formation.

4Cook till Ghee Release

Add sugar and cardamom. Cook on medium heat for 4-5 mins until halwa leaves pan sides and ghee glistens on top. Garnish with nuts.

🔥Pro Execution Notes

  • Adding 1 tbsp coarse semolina (sooji) gives a luscious grainy texture instead of a paste-like feel!
  • Always use equal ratio of ghee and besan for that signature melt-in-mouth luxury texture.
