💡SAP CHEF SECRET TIP

"Use a mix of light soy sauce (for saltiness) and dark soy sauce (for deep color); adding a dash of white pepper powder gives authentic street cart flavor!"

🛒Ingredients

  • 300g Paneer cut into cubes
  • 3 tbsp Cornstarch + 1 tbsp All-Purpose Flour (for coating)
  • 1 Large Onion & Green Bell Pepper, cut into 1 inch squares
  • 4 Green Chilli peppers, slit lengthwise
  • 1.5 tbsp Finely chopped Garlic
  • 1 tbsp Dark Soy Sauce + 1 tbsp Red Chilli Sauce + 1 tsp Green Chilli Sauce
  • 1 tsp Vinegar & 0.5 tsp White Pepper Powder
  • Spring onions for garnish

👨‍🍳Step-by-Step Instructions

1Crisp Coating

Toss paneer cubes with cornstarch, flour, pinch of salt, pepper, and 1 tbsp water until thinly coated. Shallow fry in hot oil until light golden crisp.

2High Heat Sauté

Heat 2 tbsp oil in wok over high flame. Fry chopped garlic, ginger, and slit green chillies for 30 seconds.

3Toss Peppers & Sauces

Add onion and capsicum squares. Stir fry for 1 minute on high heat keeping them crunchy. Pour soy sauce, chilli sauce, vinegar, and white pepper.

4Combine & Glaze

Toss fried paneer into sauce mixture until evenly glazed. Garnish with chopped spring onions.

🔥Pro Execution Notes

  • Do not overcook onions and capsicum — they must retain 80% raw crunch for contrast against soft paneer.
  • Add 1 tsp cornstarch slurry if you prefer a thicker gravy coating.
