  • 1.5 cups Sugar + 1 cup Water (for syrup)
  • 1 tsp Lemon Juice
  • 0.5 tsp Cardamom Powder & Saffron
  • Ghee or Oil for shallow frying

👨‍🍳Step-by-Step Instructions

1Prepare Thick Syrup

Boil sugar, water, saffron, and cardamom to 1-string consistency (5-6 mins). Add lemon juice and keep warm.

2Whisk Instant Batter

Mix maida, cornstarch, yogurt, baking powder, food color, and water into a smooth, lump-free batter with ribbon-like flow. Pour into a squeeze bottle or cloth piping bag.

3Pipe & Fry Spirals

Heat ghee in a flat-bottom pan over medium heat (1 inch oil depth). Squeeze batter in concentric spiral rings into hot oil. Fry for 2 mins turning once until crisp.

4Syrup Dip

Immediately drop hot crisp jalebis into warm saffron syrup for 30 seconds. Lift with tongs, drain excess syrup, and serve piping hot.

  • Oil depth in the pan should only be 1 inch deep — deep oil causes jalebi spirals to submerge and lose their flat concentric shape.
