  • 400g Button Mushrooms, wiped clean
  • 3 tbsp Unsalted Butter
  • 1.5 tbsp Olive Oil
  • 6 cloves Garlic, finely minced
  • 1 tsp Red Chilli Flakes
  • 1 tbsp Fresh Parsley & Thyme, chopped
  • 1 tsp Cracked Black Pepper
  • 1 tbsp Lemon Juice

👨‍🍳Step-by-Step Instructions

1Prep Mushrooms

Wipe mushrooms dry with a clean paper towel. Trim stems slightly. Keep whole for small ones, halve larger mushrooms.

2High Heat Sear

Heat olive oil in a wide heavy skillet over high heat. Add mushrooms in a single layer without crowding. Sear for 4 mins without moving until browning occurs.

3Add Butter & Garlic Aromatics

Lower heat to medium, drop in butter and minced garlic. Baste mushrooms with foaming garlic butter for 3-4 minutes.

4Finish with Herbs

Toss in chilli flakes, fresh parsley, cracked pepper, and a squeeze of fresh lemon juice. Serve immediately.

🔥Pro Execution Notes

  • Dry pan sear first without salt! Adding salt early draws out water, preventing that golden caramelized crust.
  • Use a mixture of butter and olive oil to prevent butter from burning at high temperatures.
