🛒Ingredients

  • 200g Fresh Mawa (Khoya), grated
  • 50g Fresh Paneer, finely grated
  • 2.5 tbsp All-Purpose Flour (Maida)
  • 0.25 tsp Baking Powder
  • 1.5 cups Sugar + 1.5 cups Water (for sugar syrup)
  • 4 Green Cardamom pods, crushed
  • 1 tsp Rose Water & 10-12 Saffron strands (Kesar)
  • Pure Ghee or Oil for deep frying

👨‍🍳Step-by-Step Instructions

1Prepare Cardamom Rose Syrup

Combine sugar, water, crushed cardamoms, and saffron in a saucepan. Simmer for 8-10 mins until sticky one-string consistency. Stir in rose water and keep warm.

2Form Delicate Dough

Mash khoya and paneer together with the heel of your palm for 5 mins until lump-free. Add flour and baking powder. Gently mix into a smooth soft dough without heavy kneading.

3Roll Crack-Free Balls

Divide dough into small smooth portions. Roll gently between palms to form seamless spheres. Ensure zero cracks on the surface to prevent bursting in hot ghee.

4Low Heat Slow Fry & Soak

Heat Ghee over low heat (approx 140°C). Fry jamuns on low flame while swirling ghee gently with a slotted spoon without touching balls directly until mahogany brown. Transfer immediately into warm syrup for 2 hours.

🔥Pro Execution Notes

  • Ghee temperature is critical: if ghee is too hot, jamuns turn brown outside while staying raw and doughy inside.
  • Drop a tiny test ball into hot ghee first — if it disintegrates, knead 1/2 tsp extra maida into the dough.
